Cod with Vegetables
INGREDIENTS
Serves 4:
600 grams (approx. 21.1 ounces) of salt cod, cut in pieces
extra virgin olive oil
one bunch of Swiss chard
one celery bunch with leaves
one onion100 grams (approx. 3.5 ounces) of raisins
400 grams (approx. 14 ounces) of crushed tomatoes
PREPARATION:
Put
the chopped vegetables and minced onions in a pan with a
little oil. Cook for 15 minutes, then add the tomato. Cook
another 15 minutes, then add the cod and the raisins. Let
it simmer for a while longer until the liquid has evaporated.
Serve.
